Roasted Beetroot with Chinese twist

A healthy & enjoyable accompaniment to many dishes

Bunch beetroot – containing minimum 6 medium size beetroot’s

50ml soy sauce

1 star anise

2 cloves garlic

4 fresh thyme sprigs

1tsp Chinese 5 spice

1 garlic clove – skin still on

1 tbsp Olive Oil

Line baking dish with foil – heat oven to gas 6 / 180 degrees

Quarter beetroot, add soy sauce, star anise, garlic cloves, thyme sprigs, garlic, chinese 5 spice & olive oil

Add 100ml water & stir into beetroot mix – close foil parcel & put in oven for approx 60 mins

Test if cooked my poking tip of sharp knife into one.
