Jacket (baked) potato with beans

There are so many different fillings to have with a Jacket (baked) potato matched with a salad it can provide a very filling substantial lunch that will be sure to keep you full all afternoon.

Add 1 tbsp low fat coleslaw (95 calories)

Add 25g grated mature cheddar (97 calories)

200g Potato – suitable for baking

100g baked beans

Mixed salad

  1. Either prick or put an ‘X’ in the potato.
  2. Heat oven to 200 degrees & bake potato for approx 45 mins – 1 hr (if time is limited you can always microwave potato although you will not get a crisp skin – 6 minutes on full then turn over & microwave for a further 5-6 minutes)
  3. Heat beans as required.
  4. Put together a salad ensuring you incorporate as much seasonal salad items as possible.
  5. When potato is cooked fluff up the inside with a fork, season with salt & pepper.
  6. Place on top of salad & add baked beans.
