Broccoli & Smoked Salmon (Crustless) Quiche

Who doesn’t love a quiche?  By leaving out the pastry you can still enjoy this lovely crustless quiche without feeling guilty, ideal for lunch.

1 tbsp olive oil

3 Spring onion’s – thinly sliced

300g broccoli florets

200g smoked salmon – cut up

2 tbsps Light Creme Fraiche (or quark / ricotta)

8 Eggs (medium) whisked

1-2 tsp fennel seeds

  1. Heat oven 200 / gas 6.
  2. Heat oil in oven proof frying pan over medium heat.
  3. Cook broccoli florets for 5 minutes in boiling water, drain & let dry (use paper towel if necessary)
  4. Cook spring onions for 5-6 minutes or until softened; take off the heat.
  5. Put cooked broccoli florrets, cut smoked salmon & fennel seeds into pan, season with black pepper
  6. Whisk eggs, season & pour over the mixture.
  7. Put in oven 20-25 minutes or until set.
  8. Serve with mixed salad.
