Chicken pasta in creamy mustard & mushroom sauce

Ingredients
Method
275g wholemeal pasta
200g tenderstem broccoli, cut into 5cm lengths
Spray oil
400g chestnut mushrooms – sliced
2 garlic cloves, crushed
1.5 tbsp wholegrain mustard
125g lightest soft cheese
100g baby spinach
300g cooked chicken breast – shredded
1 tbsp pine nuts
- Cook pasta as per pack instructions until al dente. Add broccoli for last few minutes cooking.
- Drain when cooked, reserving 100ml of cooking water.
- Heat spray oil in pan over medium heat add mushrooms, cover so juice is generated. Cook 8-10 minutes until tender.
- Add garlic & mustard. cook for another minute.
- Add soft cheese & reserved cooking water, mix well until cheese has melted.
- Add spinach cook until wilted.
- Add pasta & broccoli & mix / toss together.
- Add shredded chicken & warm through, adjust seasoning.
- Serve with pine nuts scattered over.
