Chicken pasta in creamy mustard & mushroom sauce

This lovely warming creamy pasta dish feels like a real treat, is low in calories, saturated fats & salt, but high in protein & will give you 2 of your recommended 5 a day.

275g wholemeal pasta

200g tenderstem broccoli, cut into 5cm lengths

Spray oil

400g chestnut mushrooms – sliced

2 garlic cloves, crushed

1.5 tbsp wholegrain mustard

125g lightest soft cheese

100g baby spinach

300g cooked chicken breast – shredded

1 tbsp pine nuts

  1. Cook pasta as per pack instructions until al dente.  Add broccoli for last few minutes cooking.
  2. Drain when cooked, reserving 100ml of cooking water.
  3. Heat spray oil in pan over medium heat add mushrooms, cover so juice is generated.  Cook 8-10 minutes until tender.
  4. Add garlic & mustard. cook for another minute.
  5. Add soft cheese & reserved cooking water, mix well until cheese has melted.
  6. Add spinach cook until wilted.
  7. Add pasta & broccoli & mix / toss together.
  8. Add shredded chicken & warm through, adjust seasoning.
  9. Serve with pine nuts scattered over.
