Spicy prawns with orzo & courgette

 This really tasty prawn dish is so quick & easy to make, using butter really enhances the flavour without overdoing the calories!

Spray oil

180g large raw king prawns

25g salted butter, softened

2 tsp spicy pesto paste – you can easily use normal pesto if you don’t like things too hot (or add chilli for a bit more kick)!

150g Orzo

2 courgettes – grated (approx 200g)

1 glove garlic

1/2 tsp fresh rosemary, finely chopped

80g petit pois – cooked

  1. Pat dry prawns on kitchen paper & season
  2. Beat butter & pesto paste in a bowl (if using chilli add also)
  3. Cook orzo pasta as per instructions, drain & set aside.
  4. Using spray oil, heat frying pan & add the prawns, cook 2-3 minutes until cooked through & prawns turned pink; transfer to plate & keep warm
  5. Add courgettes into pan with garlic, rosemary & peas, lightly fry 4-5 minutes or until the courgettes colour &, most of the liquid has evaporated, add the cooked orzo & stir through gently.
  6. Divide onto 2 warm plates whilst quickly heating the butter & pesto mix, add prawns – stir gently to cover prawns & then place on top of the orzo & courgette mix.
