Tomato & Red Lentil Soup

An easy soup to make packed with flavour

If you prefer your food a little spicy try adding chilli flakes or fresh chillies!

1 tbsp olive oil

1 large onion chopped

1 clove garlic crushed

175g red lentils

400g can chopped tomatoes

600ml (1pt) vegetable stock

300ml (1/2pt) semi skimmed milk

1 tbsp Worcestershire sauce

2 tbsps Tomato puree

Salt & pepper

Fresh parsley chopped

optional chilli flakes or fresh chilli chopped

  1. Heat oil in large pan, fry onion & garlic for approx 4-5 mins.
  2. Stir in lentils, tomatoes, stock, milk, Worcestershire sauce, tomato puree & season to taste (if using add chilli flakes / fresh chillies).
  3. Bring to boil, cover & simmer for 45 mins – add extra liquid if required.
  4. Blend until smooth in food processor or blender – or leave chunky if preferred.
  5. Garnish with freshly chopped parsley
